A successful recreation of Grandma Myrt's relish from my youth!

Ingredients (7 half-pints)
  • 6 cups corn kernels (about 15 ears)
  • 1½ cups water
  • 4 stalks celery diced
  • 2 red bell peppers diced
  • 1 green bell pepper diced
  • 1 medium onions diced
  • 2¼ cups white vinegar
  • 1¼ cups sugar
  • 3 teaspoons dry mustard
  • 1¼ teaspoons kosher salt
  • 1¼ teaspoons celery seed
  • 1 teaspoons ground turmeric
Instructions
  1. Combine everything, bring to a boil, stirring.
  2. Simmer 5 minutes after sugar has dissolved.
  3. Ladle into pint jars leaving ½" headspace.
  4. Water bath 15 minutes.
