Not too sweet, deep flavor, and freshness galore.

Ingredients (7 half-pints)
  • 2½ pounds tomatoes
  • 1 stalk of celery
  • 1 large onion
  • 1 bell pepper (any color)
  • 4 Tablespoon sugar: 3 brown, 1 white
  • 1 teaspoon Allspice
  • 1 teaspoon Cinnamon
  • 1 teaspoon Ground Cloves
  • Red Pepper flakes to taste ( we use a ¼ teaspoon)
  • 1 Tablespoon sea salt
  • ¼ cup distilled white vinegar
Instructions
  1. Chop all vegetables (or use food processor, should be chunky)
  2. Add everything to pot, bring to boil.
  3. Simmer for an hour or two until no longer watery, check and adjust spices.
  4. Fill jars and water bath 30 minutes.
