The apricot's unique flavor is a real treat in the dead of winter. Its almost too easy to make.Ingredients (28 quarts)
- 2 bushels apricots
- Sugar syrup, medium
- Wash apricots in cold water.
- Slice in half or into wedges, discarding pits.
- Fill jars gently pressing down to get as much fruit in as possible.
- Cover in boiling syrup, ½" headspace. Remove air bubbles.
- Water bath 20 minutes.
