An easy-to-make staple in our house, the maple syrup and cider really add a special flavor.

Ingredients (14 quarts) Instructions:
  1. Wash & core the apples
  2. In roasting pans, fill to rim with apple wedges.
  3. For each pans worth, add 1 cup maple syrup, 1 cup apple cider and 5 or more cinnamon sticks.
  4. Roast at 350° for 1 hour, stirring every 30 minutes or so, until apples are really soft.
  5. Run apples through a food mill.
  6. Adjust cinnamon content. If the sauce is too tart, add more maple syrup.
  7. Fill jars with 1" headspace
  8. Water bath for 20 minutes.
